Last Friday evening I went to a fun Bunco night with my alumnae chapter and we had a great time. The event was a potluck and I brought my healthy and delicious shrimp salad to share. Today I’m sharing the recipe with you. Enjoy!

A healthy and delicious salad that's easy to customize based on what you like.
- 8 oz Frozen cooked medium or large shrimp
- 1 15.5 oz can Trader Joe's Organic Black Beans
- 1 15.25 oz can Trader Joe's Whole Kernel Corn
- 1-2 medium Roma tomato
- 1/4 cup Chopped cilantro
- 1/4 cup Chopped red onion
- 1 medium Lime, juiced
- 2-4 cloves Crushed garlic
- 1 twist Salt and pepper
- 1 16 oz bag Trader Joe's Organic blue tortilla chips
- 2-3 large Avocados
- 1 tsp Sugar optional
- 1 tbsp Olive oil optional

Thaw frozen shrimp in cold water in the sink while you mix the other ingredients. Once thawed, use kitchen scissor to cut in halves (for medium shrimp) or thirds (for large shrimp) and add to large bowl with the other ingredients.

Drain and rinse the corn and black beans. Add to large bowl.

Rinse and chop the tomato, red onion, and cilantro. Add to large bowl.

Rinse the lime and squeeze the juice over the bowl of ingredients. Add crushed garlic. Add salt and pepper to taste preference.

If using the optional ingredients add the sugar and olive oil to the mix. It adds delicious flavor but I recommend leaving these out if you want to make the salad as healthy as possible.

Rinse and chop avocado when ready to eat. If making salad ahead of time, I recommend waiting to add avocado until the last minute if you have time in order to keep it from getting brown.

Mix ingredients well and chill. Add chopped avocado. Serve with tortilla chips. Enjoy!
